How to make Scallion Infused Oil

Easy to make garnish/condiment to put on top of rice, noodles and other dishes. You'll love the fresh flavor it adds to your foods.
We’ve all seen these chopped scallions cooked in oil atop rice plates and garnishes for noodles, meats, and fish. It adds a fresh onion flavor and a vibrant pop of color to any dish or meal. This simple condiment is the easiest thing to make and one of the essential recipes every good cook should learn. If you happen to love this and want to always have some handy, you can make a big batch and store it in a jar in the refrigerator. Simply scoop out a small amount when needed, heat it up in the microwave for 15 seconds, and enjoy. Super easy!

1 large bunch of scallions or green onions

1/4 cup vegetable oil (I like canola)

1/8 tsp salt

Cut off roots and discard. Rinse with cool water and pat dry with paper towels. Finely chop the scallions.

Over medium heat, add scallions, oil, and salt to a saucepan. Stirring occasionally, cook for 3-4 minutes or until onions are wilted. Transfer to a bowl and allow to cool slightly before serving.

Yields: 1/2 cup
